- Strip sage leaves from stems and finely chop.
- Strip thyme from stems and finely chop.
- Cut the butter into 1 tbsp portions.
- Remove plastic from turkey roll, then pat turkey dry with paper towels.
- Place turkey roll in a 9x13-inch baking dish or roasting pan. (NOTE: DO NOT use a glass or Pyrex dish to roast the turkey!)
- Sprinkle turkey with 1 tbsp sage, 1/2 tbsp thyme, half the Chicken Salt and season with pepper.
- Cover turkey with foil.
- Roast in the middle of the oven until golden-brown and cooked through, 3 hrs.**
- Meanwhile, in a small microwaveable bowl, melt 2 tbsp butter.
- When there is 30 min of cook time left, remove foil, add 1 cup water to the baking dish or roasting pan and brush butter over turkey.
- Return to the oven and cook uncovered for the remaining 20 min.
- When turkey is cooked through, carefully transfer to a cutting board.
- Cover with foil and let rest for 20 min.
- Reserve turkey juices in the baking dish to be used for Turkey and Thyme Gravy with Drippings.
- After 20 min, remove netting and carve turkey into 1/4-inch-thick slices.
- Transfer turkey to a serving platter.
