Cheesy Pizza Meatball Cups

Serves 4 | with Marinara Sauce

Cooking Steps

  • Before starting, remove pizza dough from the fridge and rest in a warm place for 20 min.
  • Preheat the oven to 450˚F. Wash and dry all produce.
  • Add garlic spread to a microwaveable bowl. Heat in the microwave for 30 sec, until melted. 
  • Using a silicone brush, grease a muffin pan with half the melted garlic spread.
  • On a lightly floured surface, roll dough out into a 12x4-inch rectangle. Cut in half lengthwise, then into 12 equal squares. 
  • Place one square in each greased muffin cup. Set aside to rest.

  • While dough rests, peel, then mince or grate garlic. 
  • Heat a small pot over medium. 
  • When hot, add 1/2 tbsp oil, then chopped garlic. Cook for 30 sec, stirring often, until fragrant. 
  • Add marinara sauce. Cook for 1-2 min, stirring often, until warmed through. 
  • Remove from heat and add meatballs. Stir to coat.

  • Spoon one meatball into each of the pizza dough-lined muffin cups, then push down lightly into dough.
  • Divide any remaining sauce from the pot equally over each muffin cup. 
  • Top with mozzarella and Parmesan. 
  • Brush pizza dough edges with remaining garlic spread.
  • Bake in the middle of the oven 8-10 min, until dough is cooked through.**

  • Set aside on a wire rack for 10 min to cool. Run a sharp knife around the edges of the muffin cups.
  • If serving right away, place meatball cups onto a serving dish. 
  • If serving later, cool meatball cups completely, then transfer to an air-tight container. Refrigerate until ready to serve. 
  • Once ready to serve, preheat oven to 350˚F. Arrange meatball cups a parchment-lined baking sheet. Bake in the middle of the oven for 15-18, until warmed through.
