If you've opted to add chicken breast tenders, pat chicken dry with paper towels. Cut into 2-inch pieces. Season with salt and pepper.
Heat a large oven-proof pan over medium. When hot, add 1/2 tbsp (1 tbsp) oil, then chicken. Cook for 2-3 min, turning occasionally, until golden. Add mirepoix and mushrooms.
