Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Halve zucchini lengthwise, then cut into 1/4-inch half-moons.
Cook beef and veggies

  • Heat a large pot over medium-high. 
  • When the pot is hot, add 1 tbsp (2 tbsp) butter, beef and zucchini. Cook for 4-6 min, stirring often and breaking up beef into smaller pieces, until no pink remains.** Carefully drain and discard excess fat. Season with salt and pepper.
Cook orzo

  • Add orzo. Season with salt and pepper. Stir to combine.
  • Add stock powder, Italian Seasoning and 2 1/2 cups (4 cups) water. Bring to a boil over high.
  • Reduce heat to medium. Cook uncovered for 10-12 min, stirring occasionally, until orzo is tender but still firm to the bite.

  • Thinly slice basil. 
  • Halve tomatoes. 
Finish and serve

  • Once orzo is tender, add pesto, basil and tomatoes. Cook for 1 min, stirring often, until combined. Season with salt and pepper.
  • Divide orzo between bowls.
  • Sprinkle Parmesan over top.
