These super-satisfying, no-fuss salad bowls are perfect any night of the week! Grilled chicken breasts are served on top of a bright and crunchy salad and finished off with a drizzle of punchy peanut satay sauce, ticking all of the flavour and texture boxes.

Cooking Steps

Prep

  • Lightly oil the grill. Preheat the grill to medium (approx. 400°F).
    Wash and dry all produce.
  • Halve tomatoes.
  • Roughly chop cilantro.
Make slaw and peanut sauce

  • To a large bowl, add coleslaw cabbage mix, tomatoes, vinegar, 1/2 tsp (1 tsp) sugar and 1/2 tbsp (1 tbsp) oil. Season with salt and pepper. Toss to combine.
  • To a small bowl, add peanut butter, half the sweet chili sauce, half the Cumin-Turmeric Spice Blend and 1/4 tbsp  (1/3 cup) warm water. Season with salt and pepper. Whisk to combine.
Prep and grill chicken

  • Pat chicken dry with paper towels.
  • To another large bowl, add chicken, soy sauce, remaining sweet chili sauce, remaining Cumin-Turmeric Spice Blend and 1/2 tbsp (1 tbsp) oil. Season with salt and pepper. Toss to coat.
  • Add chicken to the grill. Close lid and grill for 4-6 min, flipping halfway, until cooked through.**
Finish and serve

  • Add spring mix to bowl with slaw. Toss to coat.
  • Divide salad between plates
  • Top with chicken and a drizzle of peanut sauce. Sprinkle peanuts and cilantro over top.
