Cooking Steps

  • Preheat the grill to 400°F over medium heat.
    Wash and dry all produce.
  • Halve tomatoes.
  • Rouchly chop cilantro.

  • To a large bowl, add coleslaw cabbage mix, vinegar, 1/2 tsp (1 tsp) sugar and 1/2 tbsp (1 tbsp) oil. Season with salt and pepper. Toss to coat.
  • To a small bowl, add peanut butter, half the Sweet Chili Sauce, half the cumin-turmeric spice blend and 1 tbsp (2 tbsp) water. Stir to mix.

  • Snip a corner of chicken packaging and drain excess liquid.
  • Add chicken, remaining Sweet Chili Sauce, remaining cumin-turmeric spice blend and 1/2 tbsp (1 tbsp) oil to a medium bowl. Season with salt and pepper. Toss to coat.
  • Add chicken to the grill. Close lid and grill, 4-6 min, flipping halfway, until cooked through.**

  • Add tomatoes and spring mix to bowl with slaw. Toss to coat.
  • Divide salad between plates
  • Top with chicken, a drizzle of peanut sauce, peanuts and cilantro overtop.
