Cooking Steps

Cook rice

  • Before starting, to a medium pot, add 1 1/4 cups (2 1/2 cups) water and garlic salt. Cover and bring to a boil over high.
  • Wash and dry all produce.
  • When the water is almost at a boil, using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice, then reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed.
  • Remove from heat. Set aside, still covered.

  • Meanwhile, roughly chop cilantro.
  • Core, then cut pepper into 1/4-inch pieces.
Cook beef

  • Heat a large non-stick pan over medium-high.
  • When hot, add onions, peppers and beef to the dry pan. Cook for 4-7 min, breaking up beef into smaller pieces, until no pink remains.**
  • Add Mexican Seasoning and pineapple with its juices. Cook for 1 min, stirring often, until juices are absorbed. Season with salt and pepper.
Finish and serve

  • Fluff rice with a fork, then stir in half the crispy shallots.
  • Divide rice between bowls. Top with beef-pineapple mixture.
  • Drizzle with chipotle sauce.
  • Sprinkle with cilantro and remaining crispy shallots.

If you've opted to get beef, omit oil, then add add onions, peppers and beef to the dry pan. Cook beef in the same way the recipe instructs you to cook chorizo.**
