Prep apples

Before starting, preheat the oven to 400˚F. Wash and dry all produce. Peel, core, then cut apple into 1/4-inch pieces. Heat a large non-stick pan over medium-high heat. When hot, add 2 tbsp butter, then apples. Cook, stirring often, until tender-crisp, 4-5 min. Meanwhile, cut brioche into 1-inch pieces.

Assemble and bake apple french toast

Whisk together eggs, brown sugar, Pumpkin Pie Spice Mix, cream and 1/8 tsp salt in a large bowl. Add brioche and apples to egg mixture. Stir to coat until liquid is absorbed. Add mixture to a greased 8x8-inch baking dish. Cover with foil. Bake in the middle of the oven until puffed and golden-brown, 38-40 min. (NOTE: Remove the foil in the last 5 min of baking.)

Bake bacon

Meanwhile, arrange bacon on a parchment-lined baking sheet. Bake in the bottom of the oven until crispy and cooked through, 12-15 min.**

Finish and serve

Allow apple french toast bake to cool slightly before serving, 3-5 min. Serve with maple syrup and bacon on the side.
