Cooking Steps

Cook rice

  • Before starting, wash and dry all produce.
  • To a medium pot, add 1 1/4 cups (2 1/2 cups) water and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high.
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice, then reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed.
  • Remove from heat. Set aside, still covered.
Prep

  • Meanwhile, thinly slice mushrooms.
  • Peel, then halve yellow onion. Cut into 1/4-inch slices.
  • Thinly slice green onions.
  • In a small bowl, combine cornstarch, stock powder and 3/4 cup (1 1/2 cups) cold water. (NOTE: This is your gravy mixture!)
Form patties

  • To a medium bowl, add turkey, Asian Sesame Blend, half the panko (use all for 4 servings) and 1/4 tsp (1/2 tsp) salt. Season with pepper, then combine.
  • Form mixture into 2 (4) 5-inch-wide patties.
Cook patties

  • Heat a large non-stick pan over medium.
  • When hot, add patties to the dry pan. (NOTE: Don't crowd the pan; cook patties in 2 batches if needed.) Pan-fry 4-5 min per side, until cooked through.** 
  • Transfer to a plate, then cover to keep warm.
  • Carefully wipe the pan clean. 
Make gravy

  • To the same pan, add 2 tsp (4 tsp) oil, then mushrooms and yellow onions. Cook for 5-6 min, stirring often, until softened.
  • Add gravy mixture (from step 2). Cook for 1-2 min, stirring often, until gravy thickens slightly. Season with pepper.
Fry eggs and serve

  • Heat a non-stick medium pan over medium-high.
  • When hot, add 1 tsp (2 tsp) oil, then crack in eggs. Season with salt. Pan-fry 2-3 min, covered, until egg whites are set. (NOTE: The yolk will still be runny.)
  • Fluff rice with a fork, then stir in half the green onions.
  • Divide rice between bowls. Top each serving with a turkey patty and an egg.
  • Spoon mushroom gravy over top.
  • Sprinkle with remaining green onions.
