Cooking Steps

Prep salmon

  • Before starting, preheat the oven to 450˚F. Wash and dry all produce.
  • Pat salmon dry with paper towels. Season with salt, pepper and half the Zesty Garlic Blend.
Roast salmon

  • To a parchment-lined baking sheet, add salmon. Brush salmon with 1 tbsp (2 tbsp) Caesar Dressing.
  • Roast in the middle of the oven for 10-15 min, until cooked through.**
  • Remove and discard skin, if you like.
Prep and toast crouton crumbles

  • Meanwhile, zest, then juice half the lemon. Cut remaining lemon into wedges.
  • Remove and discard outer layer and stem of lettuce. Chop lettuce into bite-sized pieces.
  • Snip the corner of the crouton package then using your hands, gently crush croutons into crumbs.
  • Heat a small non-stick pan over medium.
  • When hot, add 1 tbsp (2 tbsp) butter, then swirl to melt. When melted, add crouton crumbs and remaining Zesty Garlic Blend. Toast for 2-3 min, stirring often, until golden and crispy. (TIP: Keep your eye on them so they don't burn!) 
Make salad

  • In a large bowl, whisk together lemon zest, half the Parmesan, remaining Caesar Dressing and 1 tbsp (2 tbsp) lemon juice. Season with salt and pepper.
  • Add lettuce and arugula-spinach mix, then toss to coat.
Finish and serve

  • Divide salmon and salad between plates.
  • Sprinkle crouton crumbles and remaining Parmesan over salad.
  • Squeeze a lemon wedge over top.
