Cooking Steps

  • Before starting, preheat the oven to 450°F.
    Wash and dry all produce.
  • Peel, then mince or grate ginger.
  • Rough chop cilantro.
  • Zest then juice half the lime. Cut any remaining lime into wedges.

  • Pat turkey dry with paper towels. Season with minced ginger, salt and pepper. (NOTE: If turkey steaks are thicker then 1-inch, place each piece on a cutting board and cover with plastic wrap. Using a rolling pin or heavy-bottomed pan, pound each turkey steak until 1-inch thick.)
  • Add 1 tbsp (2 tbsp) oil to pan, then turkey. (NOTE: Don't crowd the pan; cook in 2 batches if needed.) Pan-fry 2-3 min, flipping half way through, until golden. Transfer turkey to a parchment-lined baking sheet. Roast in the ____ of the oven for 10-12 min.

  • Meanwhile, to a lined parchment-lined baking sheet, add potatoes, Moo Shu, and 1 tbsp (2 tbsp) oil. Season withpepper then toss to coat.
