Cooking Steps

Roast potato wedges

  • Before starting, preheat the oven to 450°F.
  • Wash and dry all produce.
  • Remove any brown spots from potatoes and cut into 1/2-inch wedges.
  • To a parchment-lined baking sheet, add potatoes, half the garlic salt and 1 tbsp oil. (NOTE: For 4 servings, use 2 baking sheets, with 1 tbsp oil and a quarter of the garlic salt per sheet.) Season with pepper, then toss to coat.
  • Roast in the middle of the oven for 25-28 min, flipping halfway through, until tender and golden. (NOTE: For 4 servings, roast in the middle and bottom of the oven, rotating sheets halfway through.)
Caramelize onions

  • Meanwhile, peel, then cut onion into 1/4-inch slices.
  • Heat a medium non-stick pan over medium-high.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then onions. Cook for 3-4 min, stirring occasionally, until slightly softened.
  • Add 1 tsp (2 tsp) sugar and season with salt. Cook for 4-6 min, stirring occasionally, until onions are dark golden.
  • Remove from heat.
Form patties

  • Meanwhile, to a medium bowl, add turkey, breadcrumbs, Zesty Garlic Blend and remaining garlic salt. Season with pepper, then combine.
  • Form mixture into 2 (4) 5-inch wide patties. (TIP: Your mixture may look wet; this is normal!)
Cook patties and make fry sauce

  • Heat a large non-stick pan over medium.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then patties. Pan-fry for 4-5 min per side, until patties are cooked through.** (TIP: After patties are flipped, carefully re-shape using a spatula, pressing against the edges to form a circle.)
  • Meanwhile, in a small bowl, stir together ketchup and mayo. Set aside.
Toast buns and assemble melts

  • Meanwhile, halve buns. On another parchment-lined baking sheet, arrange buns, cut-side up.
  • Sprinkle cheese over buns.
  • Toast in the top of the oven for 3-4 min, until cheese melts. (TIP: Keep your eye them so they don't burn!)
  • Spread some fry sauce over top buns.
  • Stack pickles, patties and caramelized onions on bottom buns. Close with top buns.
Finish and serve

  • Divide patty melts and potato wedges between plates.
  • Serve remaining fry sauce on the side for dipping.
