Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Core, then cut pepper into 1/4-inch pieces.
Cook beef and veggies

  • Heat a large pot over medium-high.
  • When hot, add beef, peppers and mirepoix to the dry pot. Cook for 4-5 min, breaking up beef into smaller pieces, until no pink remains.** Carefully drain and discard excess fat. Season with salt and pepper.
Start stew

  • Add crushed tomatoes, stock powder, lentils and their liquid, 1/4 tsp (1/2 tsp) chili flakes and 1/2 cup (1 cup) water. Bring to a simmer.
  • Once simmering, cook for 4-5 min, stirring often, until stew thickens slightly. (TIP: Scrape up any brown bits from the bottom of the pan — this will add extra flavour!)
Finish and serve

  • Divide stew between bowls.
  • Dollop pesto in a circular motion over top.
  • Sprinkle with feta and more chili flakes, if you like.

If you've opted to get beef, omit oil, then add beef, peppers and mirepoix to the dry pan. Cook beef in the same way the recipe instructs you to cook the sausage.** Remove and discard excess fat.
