Before starting, wash and dry all produce. Bring 2/3 cup water to a boil in a small pot or in a kettle. Add couscous and the boiling water to a medium bowl. Season with salt and pepper, then stir to combine. Cover and let stand for 5 min.
While couscous rehydrates, core, then cut pepper into 1/2-inch pieces.
Fluff couscous with a fork. Add peppers, pesto, vinegar and spring mix to couscous, then toss to combine. Sprinkle feta over top.
