Prep and make sauce

  • Before starting, wash and dry all produce.
  • Core, then cut pepper into thin slices.
  • Thinly slice green onions, keeping white and green parts separate. 
  • In a medium bowl, whisk together soy sauce, hoisin sauce, ginger-garlic puree, peanut butter and 2/3 cup (1 1/3 cup) warm water.
Make sauce

  • Heat a large non-stick pan over medium-high.
  • When the pan is hot, add beef, peppers and green onion whites to the dry pan. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.** Season with salt and pepper.
  • Add carrots and sauce mixture (from step 1). Cook for 1-2 min, stirring often, until peanut butter melts and sauce thickens slightly.
Cook noodles

  • Add udon noodles. Cook, covered, for 2-4 min, stirring occasionally, until noodles have loosened and are evenly coated in sauce. Season with salt and pepper.
  • Remove from heat.
Finish and serve
