1
  • Before starting, wash and dry all produce.
  • Half zucchini lengthwise, then cut zucchini into 1/4-inch half-moons.
Cook beef and veggies
2
  • Heat a large pot over medium-high (use same for 4 servings).
  • When hot, add 1 tbsp (2 tbsp) butter, beef, and zucchini. Season with salt and pepper. Cook for 4-6 min, stirring often and breaking up beef into smaller pieces, until cooked through.**
  • Carefully drain fat from the beef.
Cook orzo
3
  • Add orzo. Season with salt and pepper. Stir to combine.
  • Add stock powder, Italian Seasoning and 2 1/2 cups (4 cups) water. Bring to a boil over high.
  • Reduce heat to medium. Cook uncovered for 10-12 min, stirring occasionally, until orzo is tender.
Finish prep
4
  • Roughly chop parsley.
  • Halve tomatoes.
Finish and serve
5
