This brunch is so sweet and satisfying it should achieve “World’s Best” status. It’s our way of celebrating the 20th anniversary of an all-time favorite holiday movie: Elf. This spread comes complete with: candied bacon, juicy apple and orange slices, and pecan streusel-topped maple brown sugar muffins prepared in a cozy coffee mug and served with “sugar plum” jam dipping sauce!

Instructions

Make blueberry sauce and candy bacon

Before starting, preheat the oven to 450°F. Wash and dry all produce. • In a small bowl, whisk together blueberry jam, half the sour cream and icing sugar until combined and smooth. • Cover with plastic wrap and refrigerate. • Arrange bacon strips in a single layer on a parchment-lined baking sheet, then sprinkle with 1 tbsp of brown sugar. • Roast bacon in the top of the oven until crispy and cooked through, 8-12 min.**

Prep and make streusel

Halve, core, then thinly slice apple. • Roughly chop pecans. • Peel orange then separate into segments. • Place 2 tbsp butter in another small microwavesafe bowl. • Microwave until softened, 10 sec. Stir in cinnamon, pecans and 1 tbsp of brown sugar until thoroughly combined. Freeze until ready to use.

Mix mug muffin batter

In a large bowl, whisk together remaining sour cream and ¼ cup water until mostly smooth. • Add flour, 11/2 tsp baking powder, maple syrup, remaining brown sugar and 1/4 tsp salt, then whisk until thoroughly combined. • Coat two microwave-safe mugs with nonstick cooking spray. Evenly divide batter between mugs.

Finish and serve

Microwave until batter is almost set, 1 1/2 min. Divide streusel topping over mug muffins. Microwave in 30-secintervals until a toothpick inserted into the centre comes out clean and cakes spring back to the touch. • Divide mug muffins, candied bacon, orange segments and apple slices between plates. Serve jam mixture on the side for dipping.
