Cooking Steps

  • Core, then cut pepper into 1/4-inch pieces. 
  • Peel, then cut half the onion into 1/4-inch pieces (use whole onion for 4 ppl).
  • Drain and rinse beans.

  • Heat a large pot over medium heat. 
  • When hot, add 1 tbsp (2 tbsp) oil, then onions. Cook for 3-4 min, stirring occasionally, until tender. Season with salt and pepper.

  • Add chicken to the pot. Cook 4-5 min, breaking up chicken into smaller pieces, until no pink remains.**
  • Add Enchilada Spice Blend. Cook for 1 min, stirring often, until fragrant. Season with salt and pepper.

  • Add peppers, crushed tomatoes and kidney beans to the pot. 
  • Bring to a boil over high heat. When boiling, reduce heat to medium-low. Simmer for 4-5 min, stirring occasionally, until slightly  thickened. Season with salt and pepper to taste.

  • Divide chili between bowls. 
  • Sprinkle over cheese.
  • Dollop over sour cream.
