  • Halve zucchini lengthwise, then cut into 1/2-inch half-moons.
  • Strip 1 tsp (2 tsp) thyme leaves from stems.

  • Cook for 2-3 min, stirring often, until garlic is fragrant.
  • To the pot, add crushed tomatoes, beans and their liquid, 1/4 cup (1/2 cup) water, 1/4 tsp (1/2 tsp) chili flakes, half the thyme and vegetable broth concentrate.
  • Reduce heat to medium-low.
  • Let simmer for 5-6 min, stirring occasionally, until zucchini is tender-crisp.
Toast croutons

  • Meanwhile, cut ciabatta into 1-inch pieces. On a parchment-lined baking sheet, toss ciabatta with 1 tbsp (2 tbsp) olive oil and remaining Zesty Garlic Blend, then season with salt and pepper.
  • Toast 5-6 min, stirring halfway through, until lightly golden.
Finish stew

  • To the pot, add kale and remaining thyme.
  • Simmer for 3-4 min, stirring occasionally, until kale is wilted. 
  • Season with salt and pepper.
Finish and serve

  • Divide stew between bowls.
  • Top with croutons.
  • Sprinkle feta over top.
  • Sprinkle some of the remaining chili flakes over top, if you like.
  • Drizzle 1/2 tsp (1 tsp) olive oil over top, if you like.
