Crispy chickpea falafel are tossed with a sticky hot-honey sauce before being wrapped in a tortilla with cooling pickle spiked coleslaw. Served with potato wedges and a BBQ-ranch, nothing left to do but dig in!

Instructions

  • Cut potatoes into 1/2-inch wedges.
  • Add potatoes BBQ seasoning and 1 tbsp oil to a parchment-lined baking sheet. (NOTE: For 4 ppl, use 2 baking sheets, with 1 tbsp oil per sheet.) Season with salt and pepper, then toss to coat.
  • Roast in the middle of the oven, flipping halfway through, until tender and golden-brown, 25-28 min. (NOTE: For 4 ppl, roast in the middle and bottom of the oven, rotating sheets halfway through.)

  • Meanwhile, drain pickles, reserving pickle brine in a large bowl.
  • Roughly chop pickles.
  • Add cabbage, pickles, mayo, and 1/2 tsp (1tsp) sugar to bowl with pickle brine. Season with salt to pepper. Toss to coat

  • Add honey to a small microwaveable bowl. Warm in the microwave 20 sec at a time until liquid. ** TESTER did your honey require this step???
  • Combine ranch and half the BBQ sauce (use all for 4 ppl) in a medium bowl.

  • Once potatoes have been flipped, toss falafel with 1 tbsp (2 tbsp) oil on an unlined baking sheet.
  • Roast in the top of the oven, flipping halfway through, until golden-brown, 8-10 min.

  • Place flatbreads directly in the middle oven rack. Toast flatbreads until warm, 3-4 min. (TIP: You can skip this step if you don't want to warm the flatbreads!)

  • Arrange flatbreads on a clean surface.
  • Top with spring mix, slaw and falafel. ** HEY TESTER is there extra slaw that should be served on the side?
  • Drizzle hot honey sauce over falafel
  • Drizzle some of the BBQ-ranch overtop.
  • Divide wraps and wedges between plates.
  • Serve remaining BBQ-ranch on the side for dipping.
