Cooking Steps

Toast tortilla chips

  • Preheat the oven to 450°F.
  • Wash and dry all produce.
  • To an unlined baking sheet, add tortilla chips, 2 tsp (4 tsp) oil and half the Mexican Seasoning. Season with salt and pepper. Toss to combine.
  • Bake in the middle of the oven for 2-3 min, until lightly toasted.
Prep tomato

  • Meanwhile, cut tomato into 1/4-inch pieces.
Make dressing

  • In a small bowl, combine guacamole, ranch dressing and 2 tbsp (1/4 cup) water. Season with half the garlic salt.
Cook tilapia

  • Pat tilapia dry with paper towels. Season with pepper, remaining garlic salt and remaining Mexican Seasoning.
  • Heat 1/2 tbsp (1 tbsp) oil in a large non-stick pan over medium-high.  
  • When the pan is hot, pan-fry for 3-4 min per side, until browned and cooked through.**
Finish and serve

  • In a large bowl, whisk together half the vinegar (use all for 4 servings) and 2 tsp (4 tsp) oil. Season with salt and pepper. Add spring mix, then toss to coat.
  • Divide salad between plates. Top with tilapia, tomatoes and feta.
  • Crush tortilla chips over top.
  • Spoon guacamole-ranch dressing over top.

If you've opted to get tilapia, pat dry with paper towels. Heat 1/2 tbsp (1 tbsp) oil in a large non-stick pan over medium-high. When the pan is hot, pan-fry for 3-4 min per side, until browned and cooked through.**
