Garlicky Sun-Dried Tomato Tilapia

with Peas, Bell Peppers and Orzo

Cooking Steps

Prep

  • Before starting, bring a large pot of salted water to a boil (use same for 4 servings).
    Wash and dry all produce.
  • Core, then cut pepper into 1/4-inch pieces.
Cook orzo

  • To the boiling water, add orzo and peas. Cook for 8-10 min, stirring occasionally, until orzo is tender but still firm to the bite. 
  • Reserve 1/4 cup (1/2 cup) pasta water, then strain and return orzo and peas to the same pot, off heat. 
Cook peppers

  • Meanwhile, heat a large non-stick pan over medium.
  • While the pan heats, pat tilapia dry with paper towels. Cut into 1 1/2-inch pieces.
  • Season with 1/2 tsp (1 tsp) garlic salt and pepper.
  • When the pan is hot, add 1 tbsp (2 tbsp) oil, then peppers.
  • Cook for 2-3 min, stirring often, until softened.
  • Add garlic puree.
  • Cook for 1-2 min, stirring often, until garlic is fragrant.
Make sauce and cook tilapia

  • Add sun-dried tomato pesto, half the Parmesan, 1/4 cup (1/2 cup) reserved pasta water and tilapia to the pan. 
  • Cover with a lid. Cook for 4-5 min, stirring occasionally, until sauce thickens slightly and tilapia is cooked through.**
  • Season with salt and pepper.
Finish and serve

  • To the pot with orzo and peas, add tilapia and sauce. Stir to combine.
  • Divide sun-dried tomato tilapia and orzo between bowls.
  • Sprinkle remaining Parmesan over top.

If you've opted to get tilapia, pat dry with paper towels. Cut into 1 1/2-inch pieces. Cook in the same way as recipe instructs you to cook shrimp.**
