Cooking Steps

Cook Linguine

  • Before starting, bring a large pot of salted water to a boil (use same for 4 servings). 
  • Preheat the broiler to high.
  • Wash and dry all produce.
  • To the boiling water, add linguine. Cook for 10-13 min, until tender but still firm to the bite.
  • Reserve 1/2 cup (1 cups) pasta water. Strain linguine, then return to the pot, off heat.

  • Roughly chop spinach.
  • Pat chicken dry with paper towels.
  • Carefully slice into the centre of each chicken breast, parallel to the cutting board, leaving 1/2 inch intact on the other end.
  • Open up chicken like a book. Season both sides with salt, pepper and half the Zesty Garlic Blend (use all for 4 servings)
Sear and roast chicken

  • Heat a large non-stick pan over medium.
  • When hot, add 1/2 tbsp (1 tbsp) oil and chicken.
  • (NOTE: Don't crowd the pan; cook chicken in 2 batches if needed.) Cook 3-4 min per side, until golden.
  • Transfer chicken to a foil lined baking sheet. Sprinkle parmesan over top.
  • Broil in the middle of the oven for  3-5 min until golden and cooked through.**
  • Rinse out pan.
Make sauce

  • Reheat the same pan over medium. When hot, add 1 tbsp (2 tbsp) butter and peas. Cook, for 2-3 min, stirring often until bright green.
  • Sprinkle cream sauce spice blend over top. Stir to coat.
  • Add cream, cream cheese, broth concentrate and reserved pasta water. Cook for 2-3 min, stirring often until simmering. 
  • Remove from heat. Stir in spinach. Season with salt and pepper.
Finish and serve

  • To pot of linguine, add sauce mixture. Season with salt and pepper. Stir to coat.  For a lighter sauce consistency, add water, 1-2 tbsp at a time.
  • Divide linguine between bowls.
  • Top with chicken.
