Cooking Steps

Prepare Ingredients

  • Before starting, bring a large pot of salted water to a boil (use same for 4 servings). Wash and dry all produce.
  • Cut mushrooms into 1/4-inch slices.
  • Peel, then cut onion into 1/4-inch slices.
Cook Penne

  • To the boiling water, add penne. Cook for 12-14 min, until tender but still firm to the bite.
  • Reserve 3/4 cup (1 1/2 cups) pasta water.
  • Strain penne, then return to the pot, off heat.
Cook Beef and Veggies

  • Meanwhile, heat a large non-stick pan over medium-high.
  • When hot, add beef to the dry pan. Season with salt and pepper. Cook for 4-6 min, breaking up beef and stirring often until beef is cooked through.** Carefully drain and discard excess fat. Remove beef to a plate.
  • To the same pan, add 2 tbsp butter, then onions and mushrooms.
  • Cook for 8-10 min, stirring occasionally, until veggies soften. 
  • Reduce heat to medium and continue cooking for 3-4 min, stirring occasionally, until mushrooms are golden. Season with salt and pepper. 
  • Return beef to pan.
Prepare Sauce

  • Add Cream Sauce Spice Blend. Cook for 1 min, stirring often, until fragrant.
  • Add reserved pasta water, 1/4 cup (1/2 cup) milk, half the vegetable stock powder (use all for 4 servings) and cream cheese.* 
  • Reduce heat to medium-low and cook for 2-3 min, stirring often, until cream cheese melts.
Finish Sauce and Toss Pasta

  • Roughly chop spinach.
  • Add spinach and cook for 1-2 min, stirring frequently, until wilted. Season with pepper.
  • Remove the pan from heat, then stir in half the cheddar.
  • To the pot with penne, add sauce and stir to coat. 
Finish and Serve

  • Divide creamy mushroom pasta between bowls.
  • Sprinkle remaining cheddar over top.
