Cooking Steps

  • Add spaghetti to the boiling water. Cook uncovered, stirring occasionally, until tender, 10-12 min. Reserve 1/4 cup pasta water, then drain and return to the same large pot.
  • Meanwhile, roughly chop spinach.

  • Heat a large non-stick pan over medium-high. When hot, add 1/2 tbsp oil, then sausage. Cook, breaking up sausage into smaller pieces, until no pink remains, 4-5 min.** Carefully drain and discard excess fat.
  • Add 1/2 tsp Italian seasoning and cook, stirring often, until fragrant, 1 min. Season with salt and pepper.

  • Add crushed tomatoes to the pan with sausage. Cook, stirring occasionally, until mixture comes to a simmer, 1 min.
  • Reduce heat to medium, then add cream and spinach. Stir to combine. Cook until spinach is wilted, 1-2 min. Season with salt and pepper.

  • Add rosé sauce and reserved pasta water to the pot with the pasta, then toss to combine. 
  • Divide creamy Italian sausage spaghetti between plates. 
  • Sprinkle Parmesan over top.
