  • Before starting, bring a large pot of salted water to a boil (use same for 4 servings). Wash and dry all produce.
  • To the boiling water, add cavatappi. Cook uncovered for 8-9 min, stirring occasionally, until tender but still firm to the bite. Reserve 1 cup (2 cups) pasta water.
  • Strain, then return to the pot, off heat. Drizzle 1 tsp oil over top. Toss to coat.
  • Peel, then mince or grate garlic.
  • Peel, then cut onion into 1/2-inch pieces.
  • Cut tomato into 1/2-inch pieces.
  • Roughly chop spinach.
  • Finely chop cilantro.
Cook beef

  • In a large non-stick pan, heat 1/2 tbsp (1 tbsp) oil over medium-high. When the pan is hot, add beef, garlic and onions. 
  • Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.** Carefully drain and discard excess fat. 
Finish beef

  • Add Middle Eastern Seasoning and 1/4 tsp (1/2 tsp) chili flakes. Cook for 1 min, stirring often, until fragrant. Season with salt and pepper.
  • Add tomato sauce base and 1 cup (2 cups) reserved pasta water.
  • Reduce heat to medium. Let simmer for 2-3 min, stirring occasionally.
  • To the pot with pasta, add meat sauce, spinach and half the cilantro. Stir to combine. 
Prep toppings

  • To a medium bowl, add 1/2 tbsp (1 tbsp) oil and 1/2 tsp (1 tsp) sugar. Season with salt and pepper. Stir to combine.
  • Add tomatoes, remaining cilantro and feta. Toss to combine.
Finish and serve

  • Divide pasta between bowls.
  • Drizzle yogurt sauce over top.
  • Top with tomato-feta mixture.
