- Roughly chop parsley.
- Core, then cut pepper into 1/w-inch pieces.
- Pat chicken dry with paper towels, then season all over with Italian Seasoning, salt and pepper.
- Heat a large non-stick pan over medium-high heat.
- When hot, add 1/2 tbsp (1 tbsp) oil, then chicken. (NOTE: Don't overcrowd the pan; cook chicken in 2 batches if needed.) Cook until golden, 1-2 min per side.
- Transfer chicken to a parchment-lined baking sheet.
- Bake in the middle of the oven until chicken is cooked through, 12-14 min.**
- Reheat the same pan over medium-high.
- When the pan is hot, add 2 tbsp (4 tbsp) butter, then swirl until melted. Add gnocchi, peppers and onions.
- Cook, stirring occasionally, until gnocchi is golden and veggies are tender crisp, 5-6 min.
- Add Campbell's Chicken Broth Concentrate, pesto and half the parsley to the pan with the gnocchi and veggies.
- Cook stirring often until sauce thickens, 3-4 min.
- Thinly slice chicken
- Divide gnocchi between plates.
- Top with chicken.
- Sprinkle mozzarella and remaining parsley overtop.
