Don't have a garlic press? Lay the garlic cloves on a chopping board, then place a chef’s knife on top and press down firmly to crush. Finely chop the garlic.
Wash and dry all produce.* In a large pot, add 10 cups water and 2 tsp salt. (NOTE: Use same for 4 ppl). Cover and bring to a boil over high heat. Peel, then thinly slice shallot. Remove shiitake mushroom stems, then roughly chop all mushrooms. Thinly slice chives. Peel, then mince or grate garlic. Cut bacon into 1/4-inch strips.

To the boiling water, add tortellini. Cook, stirring occasionally, until tender, 6-8 min. When tortellini is done, reserve 1/2 cup pasta water (dbl for 4 ppl). Drain, then return to the same pot. Set aside.

Meanwhile, heat a large non-stick pan over medium heat. When hot, add 1 tsp oil (dbl for 4 ppl), then bacon. Cook, stirring occasionally, until crispy, 6-7 min. (TIP: Cook to a min. internal temp. of 71°C/160°F.**) Transfer to a paper towel-lined plate and set aside.

To the same pan, add mushrooms, garlic and shallots. Cook, stirring occasionally, until mushrooms are golden-brown, 5-6 min. Remove pan from heat, then stir in cream cheese, sour cream and 1/4 cup milk (dbl for 4 ppl). Cook, stirring together, until sauce is combined, 1 min. Set aside.

To the tortellini, add mushrooms sauce, spinach and reserved pasta water. Stir together, until spinach wilts, 1 min.

Divide pasta between bowls. Sprinkle over crispy bacon and chives.
