Cooking Steps

Cook rice

  • Before starting, wash and dry all produce.
  • To a medium pot, add coconut milk and 1/2 cup (3/4 cup) warm water. Bring to a simmer over high. 
  • Using a strainer, rinse rice until water runs clear.
  • To the simmering coconut milk mixture, add rice, 1/2 tsp (1 tsp) sugar and 1/4 tsp (1/2 tsp) salt. Stir, then reduce heat to low.
  • Cover and cook for 13-15 min, until rice is tender and liquid is absorbed.
  • Remove from heat. Set aside, still covered.

  • Meanwhile, core, then cut pepper into 1/4-inch slices.
  • Zest, then juice half the lime.
  • Roughly chop cilantro.
Cook turkey

  • In a large non-stick pan, heat 1 tbsp (2 tbsp) oil over medium-high.
  • When hot, add turkey. Cook for 3-5 min, breaking up turkey into smaller pieces, until no pink remains.** 
  • Add peppers, ginger-garlic puree, cabbage and Thai Spice Blend. Cook for 3-4 min, stirring often, until veggies are tender.
  • Add 1/4 cup (1/2 cup) water. Stir to combine. Season with salt and pepper.
Make sauce

  • Meanwhile, to a small bowl, add nuoc cham, half the lime zest, lime juice, fish sauce and 1 tbsp (2 tbsp) water. Stir to combine.
Finish and serve

  • To rice, add half the cilantro and remaining lime zest, then fluff with a fork.
  • Divide rice between bowls. Top with turkey mixture. 
  • Sprinkle peanuts and remaining cilantro over top.
  • Serve sauce on the side.
  • Squeeze a lime wedge over top.

If you've opted for turkey, add 1 tbsp (2 tbsp) of oil to the pan, then add turkey. Cook turkey in the same way the recipe instructs you to cook the beef.** Disregard instructions to drain excess fat.
