Cooking Steps

Cook rice

  • Before starting, wash and dry all produce.
  • To a medium pot, add coconut milk and 1/2 cup (3/4 cup) warm water. Bring to a simmer over high. Start recipe when coconut milk mixture is simmering.
  • Using a strainer, rinse rice until water runs clear.
  • To simmering coconut milk mixture, add rice, 1/2 tsp (1 tsp) sugar and 1/4 tsp (1/2 tsp) salt. Stir, then reduce heat to low.
  • Cover and cook for 12-15 min, until rice is tender and liquid is absorbed.
  • Remove from heat. Set aside, still covered.

  • Meanwhile, core, then cut pepper into 1/4-inch slices.
  • Zest, then juice half the lime. Cut remaining lime into wedges.
  • Roughly chop cilantro.
  • Strip Thai basil leaves from stems, then thinly slice.
Cook beef

  • In a large non-stick pan, heat 1/2 tbsp (1 tbsp) oil over medium-high. When the pan is hot, add beef. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.** Carefully drain and discard excess fat.
  • Add peppers, ginger-garlic puree, cabbage and Thai Spice Blend. Cook for 3-4 min, stirring often, until veggies are tender.
  • Add 1/4 cup (1/2 cup) water. Stir to combine. Season with salt and pepper.
Make sauce

  • Meanwhile, to a small bowl, add nuoc cham, fish sauce, lime juice, half the lime zest and 1 tbsp (2 tbsp) water. Stir to combine.
Finish and serve

  • To rice, add half the cilantro and remaining lime zest, then fluff with a fork.
  • Divide rice between bowls.
  • Divide beef mixture betwen bowls.
  • Sprinkle peanuts, remaining cilantro and Thai basil over top.
  • Serve sauce on the side.
  • Squeeze a lime wedge over top.
