Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Core, then cut pepper into 1/4-inch slices.
  • Zest, then juice half the lime. Cut remaining lime into wedges. 
  • Thinly slice green onions. 
  • Thinly slice jalapeño into 1/4-inch rounds, removing seeds for less heat. (TIP: We suggest using gloves when prepping jalapeños!)
Pickle jalapeños

  • To a small pot, add 1 tbsp (2 tbsp) lime juice, jalapeños, 2 tbsp (1/4 cup) water and 2 tsp (4 tsp) sugar. Season with salt.
  • Bring to a simmer over medium-high. Cook for 1-2 min, stirring often, until sugar dissolves.
  • Remove from heat. Transfer jalapeños, including liquid, to a small bowl.
  • Set aside in the fridge to cool.
Cook beef and peppers

  • Heat a large non-stick pan over medium-high. When the pan is hot, add 1/2 tbsp (1 tbsp) oil, then beef and peppers. Cook for 4-5 min, breaking up beef into smaller pieces, until no pink remains.**
  • Carefully drain and discard excess fat.
  • Add Mexican Seasoning and lime zest. Cook for 1 min, stirring often, until fragrant.
  • Season with salt and pepper.
Warm tortillas

  • Just before serving, wrap tortillas in paper towels.
  • Microwave for 30 sec-1 min, until tortillas are warm and flexible. (TIP: You can skip this step if you don't want to warm the tortillas!)
Finish and serve

  • Drain pickled jalapeños. 
  • Arrange beef filling and all of the toppings in small serving bowls and place in the middle of the table.
  • Divide tortillas between plates.
  • Allow everyone to create their tacos however they like, with beef-pepper mixture, pickled jalapeños, cheese, salsa, guacamole, sour cream and green onions.
