Cooking Steps

Cook zucchini

  • Before starting, wash and dry all produce.
  • Heat a large pot over medium-high.
  • While pot heats, halve zucchini lengthwise. Cut into 1/4-inch half-moons.
  • When hot, add 1/2 tbsp (1 tbsp) oil and zucchini. Season with salt and pepper. Cook for 1-2 min, stirring often, until zucchini is tender-crisp and lightly golden. Transfer to a plate.
Cook plant-based protein shred mix

  • Reheat the same pot over medium-high.
  • Add 1/2 tbsp (1 tbsp) oil, then protein shreds and mirepoix. Season with salt and pepper.
  • Cook for 6-8, tossing occasionally, until until veggies are tender-crisp and protein shreds are cooked through.** 
  • Sprinkle Cream Sauce Spice Blend over top. Stir to combine.
Finish soup

  • Add zucchini, tomato sauce base, stock powder, tortellini and 3 cups (5 cups) water. Bring to a boil over high. Reduce heat to medium.
  • Cover and cook for 4-6 min, stirring occasionally, until tortellini are tender. 
  • Add spinach and 1 tbsp (2 tbsp) butter. Season with salt and pepper. Cook for 1 min, stirring often, until spinach wilts and butter melts. (TIP: For a lighter soup consistency, add water, 1/4 cup at a time.)
Finish and serve

  • Divide soup between bowls.
  • Sprinkle Parmesan over top.
