Cooking Steps

Cook rice

  • Before starting, wash and dry all produce.
  • Massage the pouch of rice to separate grains.
  • Open top of package and heat rice in the microwave for 2 min. (NOTE: If you don’t have a microwave, stir-fry rice in a hot non-stick pan with a splash of water for 3 min, until heated through.)
Cook shrimp

  • Using a strainer, drain and rinse shrimp, then pat dry with paper towels. Season with salt and half the lemon-pepper seasoning (use all for 4 servings).
  • Heat a large non-stick pan over medium.
  • When hot, add 1 tbsp (2 tbsp) oil, then shrimp and garlic puree. Cook for 2-3 min, stirring occasionally, until shrimp just turn pink.**
  • Remove from heat, then cover to keep warm.

  • Core, then chop tomato into 1/2-inch pieces.
Make salad

  • To a large bowl, add half the vinegar (use all for 4 servings), 1/4 tsp (1/2 tsp) sugar and 1 tbsp (2 tbsp) oil. Season with salt and pepper, then whisk to combine.
  • Add tomatoes, spring mix and feta. 
  • Toss to combine just before serving.
Finish and serve

  • Fluff rice with a fork. (NOTE: Pouch will be hot!)
  • Divide shrimp, rice and salad between plates.
  • Serve yogurt sauce alongside or drizzle over top.
