Cooking Steps

Make fries

  • Before starting, preheat the oven to 450°F. Wash and dry all produce.
  • Remove any brown spots from potatoes, then cut into 1/2-inch fries.
  • In a large bowl, toss together fries, 1 tbsp (2 tbsp) oil and half the Spanish Spice Blend. Season with salt and pepper.
  • To a parchment-lined baking sheet, add fries. (NOTE: For 4 servings, use 2 baking sheets.)
  • Roast in the middle of the oven for 25-28 min, flipping halfway through, until golden. (NOTE: For 4 servings, roast in the middle and bottom of the oven, rotating sheets halfway.)

  • Meanwhile, core, then cut pepper into 1/2-inch pieces.
  • Peel, then cut onion into 1/4-inch pieces.
  • Finely chop parsley.
  • Drain olives over a small bowl, reserving the brine. Roughly chop olives.
Cook beef and veggies

  • In a large pot, heat 1/2 tbsp (1 tbsp) oil over medium-high.
  • When the pot is hot, add beef, peppers and onions. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.** Season with salt and pepper.
  • Sprinkle Gravy Spice Blend over top. Cook for 1 min, stirring often, until beef and veggies are well coated.
Start stew

  • To the same pot, add tomato sauce base, beef stock powder, piri piri sauce, remaining Spanish Spice Blend, 1/2 tbsp (1 tbsp) olive brine and 2 cups (4 cups) water. Bring up to a boil.
  • Discard any remaining olive brine. 
Simmer stew

  • Once boiling, reduce heat to medium and cook for 5-6 min, until stew thickens slightly. 
Finish and serve

  • Divide stew between bowls.
  • Sprinkle chopped olives and parsley over top.
  • Serve fries alongside for dipping.
