Cooking Steps

Cook couscous

  • To a medium pot,  add half the stock powder, and 2/3 cup (1 1/3 cups) water. Bring to a boil over high.
  • Once boiling, stir in couscous. Remove the pot from heat, then cover and set couscous aside for 5 min to rehydrate.

  • Heat a large non-stick pan over high heat. 
  • While pan heats, cut tomatoes into 1/4-inch pieces.
  • Using scissors, roughly snip parsley.
  • To a large bowl, add cabbage, tomatoes, 1/4 tsp (1/2 tsp) salt, 1/4 tsp (1/2 tsp) sugar and 1 tsp (2 tsp) oil. Toss to mix.
Cook beef and warm tortillas

  • When hot, add beef, Shawarma Spice Blend and remaining stock powder to the dry pan. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.**  Season to taste with salt and pepper.
  • Just before serving, wrap tortillas in paper towels.
  • Microwave for 30 sec-1 min, until tortillas are warm and flexible. (TIP: You can skip this step if you don't want to warm the tortillas!)
Assemble and serve

  • Arrange tortillas on a clean surface.
  • Fluff couscous with a fork. Stir in half the parsley.
  • Top tortillas with some of the couscous, beef and veggies.
  • Drizzle yogurt sauce overtop.
  • Sprinkle feta and remaining parsley over top.
  • Divide wraps and remaining couscous between plates
