Cooking Steps

Marinate cabbage

  • Before starting, wash and dry all produce.
  • Juice lime.
  • To a large bowl, add cabbage, lime juice, 1/4 tsp (1/2 tsp) sugar, 1/8 tsp (1/4 tsp) salt and 1/2 tbsp (1 tbsp) oil. Season with pepper. Toss to coat.

  • Cut tomato into 1/4-inch pieces. Season with salt and pepper.
  • Roughly chop cilantro.
  • Cut or tear pulled mushrooms into 1/2-inch pieces.
Cook pulled mushrooms and beef and sear corn

  • Heat a large non-stick pan over medium-high.
  • When the pan is hot, add 1 tbsp (2 tbsp) oil, then pulled mushroms. Cook for 2-3 min, stirring often, until golden.
  • Add beef and corn. Cook for 4-6 min, breaking up beef into smaller pieces, until corn is lightly charred, pulled mushrooms are crisp and golden and beef is cooked through.**
  • Remove from heat, then stir in Chili-Cumin Spice Blend, chipotle sauce and 1 tbsp (2 tbsp) water. Season with salt and pepper. 
Warm tortillas

  • Just before serving, wrap tortillas in paper towels.
  • Microwave for 30 sec-1 min, until tortillas are warm and flexible. (TIP: You can skip this step if you don't want to warm the tortillas!)
Finish and serve

  • Arrange tortillas on a clean surface.
  • Top tortillas with marinated cabbage, pulled mushroom-beef-corn mixture and tomatoes. 
  • Dollop sour cream over top.
  • Sprinkle feta and cilantro over top.

If you've opted to add beef, add to pan with corn. Cook for 4-6 min, breaking up beef into smaller pieces, until corn is lightly charred, pulled mushrooms are crisp and golden and beef is cooked through.** Follow the rest of the recipe as written.
