Cooking Steps

  • Before starting, add 1 cups water and 1/8 tsp salt to a medium pot. Cover and bring to a boil over high.
    Wash and dry all produce.
  • Using a strainer, rinse rice until water runs clear. 
  • To the boiling water, stir in rice and Cumin-Turmeric Spice Blend. Stir to combine, then reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed.
  • Remove from heat. Set aside, still covered.

  • Meanwhile, heat a large non-stick pan over high.
  • When hot, add 1 tbsp oil, then beef. Cook for 3-4 min, breaking up beef into smaller pieces, until no pink remains.**
  • Add Shawarma Spice Blend. Cook for 1 min, stirring constantly, until fragrant. Season with salt and pepper.
  • Meanwhile, halve tomatoes. 
  • Cut cucumber into 1/4-inch half moons. 
  • Strain olives. 
  • Add half the vinegar and 1/2 tsp sugar to a small bowl, then whisk to combine. Add tomatoes and cucumbers, then stir to coat.

  • Fluff rice with a fork. Add 1 tbsp butter and olives into rice. Season with salt and pepper, then stir to combine.
  • Divide rice and beef between 2 air-tight containers. Top with veggies. 
  • Once ready to eat, drizzle over yogurt sauce, then sprinkle with feta.
