Cooking Steps

  • Before starting, preheat the oven to 450°F.
    Wash and dry all produce.
  • Peel, then cut onion in half.
  • Cut half the onion into 1/4-inch pieces.
  • Cut the other half into 1/2-inch slices. 
  • Core, then cut pepper into 1/2-inch slices. 
  • Mince or grate garlic.
  • Roughly chop parsley.
  • Line a baking sheet with foil, then grease with 1 tbsp. (NOTE: For 4 servings, use 2 baking sheets, with 1 tbsp oil per sheet.) Set aside.

  • To a large bowl, add chopped onion, Middle Eastern Seasoning, beef, half the garlic and half the parsley. Season with 1/4 tsp (1/2 tsp) salt and pepper. 
  • Mix well to combine. 
  • Dollop the beef mixture on one side of the baking sheet. Form a square 6X6-inches (12x12 for 4ppl). Using a spatula, cut square into 4 (8) equal parts lengthwise to create strips.

  • To a medium bowl, add peppers, sliced onions and 1/2 tbsp (1 tbsp) oil. Season with salt and pepper, then toss to combine. Set aside. 
  • To a small microwavable bowl, add 2 tbsp (4 tbsp) butter. Melt for 30 sec in the microwave. (NOTE: Melt butter in a small pot, if you don't have a microwave!)
  • Add Cumin-Turmeric Spice Blend and 1/2 tbsp (1 tbsp) water. Season with salt, then sitr to combine.

  • Spread rice out on the other side of the baking sheet. (NOTE: For 4 servings, use the second baking sheet for rice and veggies.)
  • Using your hands, break up any large lumps. Drizzle butter-spice mixture over rice. Toss to combine. 
  • Top rice with veggies. 
  • Cook in the middle of the oven for 12-15 min or until veggies and rice are tender and meat is cooked through.** (NOTE: For 4 servings, roast in the meat in bottom and rice in middle of the oven.)

  • Meanwhile, to another small bowl, add mayo, 1/4 tsp (1/2 tsp) chopped garlic and 1/2 tbsp (1 tbsp) water. Stir to combine.

  • Divide rice and veggies between plates.
  • Sprinkle over remaining parlsey. 
  • Top with beef kebabs. 
  • Drizzle over garlic toum.
