One Pot Creamy Sweet Pepper Sausage and Bean Stew

with Parmesan Dressed Greens

This is a one pot wonder for those who delight in turning Italian seasoned sausage and pantry staple cannellini beans into a spectacular dinner. Top the stew with a peppery arugula-spinach salad that is laced with crispy shallots and parmesan for a dish that is crunchy, creamy and savoury comfort in every bite.

Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Core, then cut pepper(s) into 1/4-inch peices.
Start stew

  • Heat a large pot over medium-high heat.
  • When hot, add 1 tbsp (2 tbsp) oil, mirepoix, peppers, sausage, and Italian herb Spice Blend. Season with salt and pepper. Cook for 6-8 min, breaking up sausage into smaller pieces, until no pink remains.**
Finish stew

  • Sprinkle Cream Sauce Spice Blend overtop. Stir to mix.
  • Add beans along with liquid, cream, pesto/ crushed tomatoes and ___ water.
  • Bring to a boil over high, then reduce heat to medium. Cook for 3-4 min, stirring often until lightly thickened. (TIP: If you prefer a brothier stew, add more water, 1/4 cup at a time.) Season to taste with salt and pepper?
Make parmesan greens

  • To a large bowl, add crispy shallots, parmesan, arugula-spinach mix and 1 tsp (2 tsp) oil. Season with salt and pepper. Toss to coat.
Finish and serve

  • Divide stew beween bowls.
  • Top with parmesan greens.
