Cooking Steps

  • Before starting, wash and dry all produce.
  • Pat chicken dry with paper towels. Season with salt and pepper.
  • Heat a large pot over medium-high.
  • Meanwhile, thinly slice mushrooms.
  • Peel, then cut onion into 1/4-inch pieces.
  • When the pot is hot, add 1 tbsp (2 tbsp) oil, then chicken.
  • Cook for 2-3 min, stirring occasionally, until beginning to brown.

  • To the same pot, add mushrooms, onions, orzo and cooking wine. Cook for 5-6 min, stirring constantly, until veggies soften. Season with salt and pepper. (NOTE: Chicken will finish cooking in step 4).
  • Transfer mixture to a large bowl. 

    TESTER: I'm trying to give the orzo a head start in cooking here since the last test was 4p and total time went over by 15 min.

  • Reduce heat to medium-low, then melt 2 tbsp (4 tbsp) butter.
  • Add Cream Sauce Spice Blend. Cook for 30 sec, stirring often, until fragrant.
  • Add chicken stock powder, cream, 1/2 cup (1 cup) milk and 2 cups (4 cups) hot water, then whisk to combine. (TIP: Use a silicone whisk so you don't scratch the pot!)
  • Increase to high heat to bring mixture up to a boil.

    TESTER: How is the added water amount here?

  • Once the mixture is boiling, reduce heat to medium, then add orzo-chicken mixture from (step 2). (TIP: Make sure the orzo is covered completely in the sauce.) Cook for 8-10 min, stirring constantly, until tender but still firm to the bite.
  • Add Parmesan. Cook for 2-5 min, until Parmesan melts and sauce has reduced and thickens slightly. Season with salt and pepper.

    Tester: Does the orzo need longer to cook? This is taken from the SOT/Style Guide, but I've seen other one pot orzo's go for a longer time range. Pls advise.

  • Meanwhile, finely chop parsley.
  • Divide chicken pasta between bowls.
  • Sprinkle parsley over top.
