Cooking Steps

  • Before starting, remove pizza dough from the fridge and rest in a warm spot for 20 min. Preheat the oven to 450°F. Wash and dry all produce. 
  • Divide dough into 6 equal pieces. Roll into balls. Let dough rest in a warm place for 8-10 min.
  • While dough rests, heat a large non-stick pan over medium-high.
  • Cut bacon into 1/2-inch pieces.
  • When hot, add bacon and 2 tbps water to the pan. (NOTE: For 4 servings, cook bacon in batches with another 2 tbsp water.) Cook for 7-9 min, flipping occasionally, until crispy.** 
    Remove the pan from heat.
  • Transfer bacon to a paper towel-lined plate. Set aside.

  • Grease an unlined baking sheet with 1/2 tbsp oil. (NOTE: For 4 servings, use 2 baking sheets, with 1/2 tbsp oil per sheet.)
  • Working with one ball of dough at a time, flatten with the palm of your hand. Stretch dough into a 5-inch circle, 1/2-inch thick.
  • Transfer dough to prepared baking sheet. Repeat with remaining dough.
  • Spread 1 tbsp maranara over each circle.
    Sprinkle cheese over sauce, then top with bacon.

  • Bake in the middle of the oven for 10-15 min, until cheese is milted and underside is crisp. (NOTE: For 4 servings, bake pizzas in the middle and top of the oven, rotating sheets halfway through.)
  • Meanwhile, peel, halve then cut carrot into 1/4-inch half-moons. 
  • Core, then cut apple into 1/2-inch slices.

  • To a large bowl, add vinegar, 1/2 tsp (1 tsp) sugar and 2 tbsp (4 tbsp) oil. Whisk until combined. 
  • Add carrots and apples to the bowl, then toss to coat. (TIP: If you have a picky eater, reserve a few slices of each on the side without dressing!)
  • To a microwavable bowl, add remaining marinara. Cook for 1-2 min, in the microwave, until warmed through.

  • Add spring mix to bowl, then toss to coat. Season with salt and pepper. 
  • Divide pizzas and salad between plates. 
  • Serve warm marinara on the side for dipping.
