  • Before starting, preheat your broiler to high.
  • Wash and dry all produce.
  • On a foil-lined baking sheet, toss tomatoes with half the Mediterranean Spice Blend and 1/2 tbsp (1 tbsp) oil. Season with salt and pepper.
  • Broil in the middle of the oven for 4-5 min, until slightly charred.

  • Meanwhile, drain then rinse beans.
  • In a large bowl, add beans, vinegar, 1 tbsp (2 tbsp) oil and remaining Mediterranean Spice Blend. Season with salt, then toss to coat. Set aside.  
  • Slice radish into 1/4-inch rounds.
  • Drain the liquid from roasted red peppers, then roughly chop.
Assemble flatbreads

  • On another baking sheet, arrange flatbreads. Broil in the middle of the oven for 1-2 min per side, until golden.
  • Onto toasted flatbreads, spread marinara, then top with roasted red peppers, charred tomatoes, mozzarella and half the feta. (NOTE: For 4 servings, use 2 baking sheets, with 2 flatbreads per sheet.)

  • Broil assembled flatbreads in the middle of the oven for 3-4 min, until cheese melts and toppings are heated through.** 
Toss salad

  • Meanwhile, to the large bowl with the beans and dressing, add spinach and radish. Season with salt and pepper, then toss to combine. 
Finish and serve

  • Cut the flatbreads into quarters.
  • Divide flatbreads between plates. Serve bean salad on the side.
