Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Finely chop parsley.
  • Rough chop spinach.
  • Core, then cut pepper into 1/2-inch pieces.
  • Zest, then juice half the lemon (use whole lemon for 4 servings). Cut any remaining lemon into wedges.
Start chicken and orzo

  • Heat a large pot over medium. 
  • When the pot is hot, add 1 tbsp (2 tbsp) oil, then chicken and half the Cajun Spice Blend. Cook for 4-5 min, stirring occasionally, until golden. (NOTE: Chicken will finish cooking in step 3).
  • To the pot, add mirepoix, orzo, peppers, remaining Cajun Spice Blend and Cream Sauce Spice Blend. Cook for 1 min, until fragrant.
Simmer chicken and orzo

  • To the pot, add cream and 1 3/4 cups (3 1/2 cups) water. Bring to a simmer.
  • Once simmering, reduce heat to medium-low. Cover and cook for 10-12 min, stirring occasionally, until orzo is tender, chicken is cooked through and sauce has thickened slightly.**
  • Add 1 tbsp (2 tbsp) butter, half the lemon zest, spinach and lemon juice. Season with salt and pepper. Stir for 1 min, until spinach is wilted. 
Finish and serve

  • Divide chicken and orzo between bowls.
  • Sprinkle parsley over top.
  • Sprinkle remaining lemon zest over top.
  • Squeeze a lemon wedge over top, if you like.
