Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Cut bok choy into 1/2- inch pieces. Rinse bok choy leaves to wash away any hidden dirt.
  • Thinly slice mushrooms.
  • Thinly slice green onion.
Make soup base

  • In a large bowl, combine miso broth concentrate, tahini sauce, soy sauce, half the beef stock powder, half the chili-garlic sauce, half the vinegar (use all for 4 servings), 1/8 tsp (1/4 tsp) sugar and 2 1/2 cups (5 cups) water.
Cook beef and veggies

  • In a large pot, heat 1/2 tbsp (1 tbsp) oil over medium-high.
  • When the pot is hot, add beef, mushrooms and remaining beef stock powder. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.**
  • Add bok choy and cook for 1 min, stirring occasionally, until beginning to soften.
Start soup

  • To the same pot, add prepared soup base (from step 2). Bring up to a boil.
Cook noodles

  • Once mixture comes up to a boil, add ramen noodles. Cook for 1-2 min, until tender.
Finish and serve

  • Divide ramen between bowls.
  • Drizzle remaining chili-garlic sauce over top.
  • Sprinkle green onions and cashews over top.
