Cooking Steps

Make mashed potatoes and prep

  • Before starting, wash and dry all produce.
  • Place potatoes still in the package, front-side down in the microwave.
  • Microwave for 5-6 min, until tender. (NOTE: For 4 servings, microwave potatoes in batches.) Carefully transfer potatoes to a large heat-proof bowl. 
  • While potatoes are hot, add half the cheese, 1/4 cup (1/2 cup) milk and 1 tbsp (2 tbsp) butter. Mash until creamy. Season with salt and pepper.
  • Meanwhile, thinly slice green onion, keeping white and green parts separate. 
  • Peel, then mince or grate garlic.
Prep chicken and cook corn

  • On a clean cutting board, pat chicken dry with paper towels. Cut into 1/2-inch pieces. Season with salt, pepper and Applewood Smoke Spice.
  • Heat a large non-stick pan over medium.
  • When the pan is hot, add green onion whites and 1 tbsp (2 tbsp) butter, then swirl the pan for 1 min, until melted.
  • Add corn and 2 tbsp (1/4 cup) water. Stir to combine. Cover and cook for 5-6 min, stirring occasionally, until water evaporates and corn is tender. Season with salt and pepper.
  • Transfer corn to a small bowl, add pickle relish, then stir to combine. 
Cook chicken

  • To the same pan over medium, add 1/2 tbsp (1 tbsp) oil, then chicken. Cook for 2-3 min, turning occasionally, until golden.
  • Sprinkle Gravy Spice Blend over chicken. Cook for 1 min, stirring often, until fragrant. 
Cook gravy

  • Reduce heat to medium-low, then add broth concentrate, garlic and 1 cup (2 cups) water. Cook for 5-7 min, stirring occasionally, until gravy is thickened and chicken is cooked through.** Season with salt and pepper.
Finish and serve

  • Divide mashed potatoes between bowls. Top with corn mixture and remaining cheese.
  • Spoon chicken and gravy mixture over top.
  • Sprinkle remaining green onions over top.
