Cooking Steps

Prep and start veggies

  • Before starting, preheat the oven to 475°F. Wash and dry all produce. 
  • Core, then cut pepper into 1/8-inch slices.
  • To the aluminum tray, add peppers, onions, half the Zesty Garlic Blend and 1/2 tbsp (1 tbsp) oil. Season with salt and pepper. Toss to coat.
  • Roast in the middle of the oven for 8-10 min, untl tender-crisp.
Prep and cook beef patties

  • While veggies roast, to a large bowl, add beef, breadcrumbs, remaining Zesty Garlic Blend and 1/4 tsp (1/2 tsp) salt. Season with pepper, then combine. Form mixture into 6 (12) 3-inch patties.
  • Once veggies have roasted for 10 min, remove from the oven. 
  • Turn broiler to high. 
  • Stir veggies, then carefully place patties over top. (NOTE: It's okay if patties are overlapping slightly!)
  • Broil in the top of the oven for 8-10 min, until lightly charred and cooked through.**
Finish prep

  • While patties and veggies roast, thinly slice cucumbers.
  • To a large bowl, add half the vinegar (use all for 4 servings), 1/4 tsp (1/2 tsp) sugar and 1/2 tbsp (1 tbsp) oil. Season with salt and pepper. Stir to combine.
  • Place cucumbers and spring mix over top. Don't toss until step 6!
Finish beef patties and veggies

  • Remove patties and veggies from the oven. Squeeze marinara over patties. Sprinkle cheese over top.
  • Broil in the top of the oven for 2-3 min, until cheese has melted. 
Toast buns

  • Halve buns.
  • Arrange buns directly on the middle rack of the oven, cut-sides up. Toast for 3-4 min, until golden. (TIP: Keep an eye on them so they don't burn!)
Finish and serve

  • Stack bottom buns with beef patties and some of the pepper-onion mixture. Close with top buns.
  • Toss salad.
  • Divide subs, any remaining pepper-onion mixture and salad between plates.
