Before starting, wash and dry all produce. Core, then cut pepper into 1/4-inch slices.

Heat a large non-stick pan over medium-high heat. When hot, add 1 tbsp oil, then turkey and peppers. Cook, breaking up turkey into smaller pieces, until no pink remains, 4-5 min.** Add tomato sauce base, Enchilada Spice Blend and 2 tbsp water. Cook, stirring often, until fragrant, 1 min. Season with salt and pepper.

Wrap tortillas in paper towels. Microwave until tortillas are warm and flexible, 1 min. (TIP: You can skip this step if you don't want to warm the tortillas!)Divide tortillas between plates.Top with turkey and peppers, cheese and guacamole.
