Cooking Steps

Cook rice

  • Before starting, to a medium pot, add 1 1/4 cups (2 1/2 cups) water and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high. Wash and dry all produce.
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice, then reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed.
  • Remove from heat. Set aside, still covered.
Prep and make sauce

  • Meanwhile, trim ends from gai lan. Cut into 1-inch pieces. (NOTE: Cut any larger stalks in half lengthwise, leaving thinner stalks whole.)
  • Thinly slice mushrooms.
  • Thinly slice green onion.
  • Peel, then mince or grate garlic.
  • In a medium bowl, combine oyster sauce, garlic, half the Moo Shu Spice Blend, half the vinegar (use all for 4 servings) and 1/3 cup (2/3 cup) water. (NOTE: This is your stir-fry sauce.)
Toast peanuts

  • Heat a large non-stick pan over medium-high. 
  • When hot, add peanuts to the dry pan. Toast for 3-4 min, stirring often, until golden. (TIP: Keep your eye on them so they don't burn!)
  • Transfer to a plate.
Cook beef and veggies

  • Reduce heat to medium.
  • To the same pan, add 1/2 tbsp (1 tbsp) oil and mushrooms. Cook for 1-2 min, stirring occasionally, until mushrooms begin to soften.
  • Add beef and remaining Moo Shu Spice Blend. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.**
  • Add gai lan and prepared stir-fry sauce (from step 2). Cook for 2-3 min, stirring often, until gai lan is tender and sauce thickens slightly.
Flavour rice

  • Meanwhile, when the rice is done, fluff rice with a fork. Stir in half the green onions. 
Finish and serve

  • Divide rice between plates. Top with beef and veggie stir-fry.
  • Spoon any remaining sauce over top.
  • Sprinkle with peanuts and remaining green onions.
