- Heat a large non-stick pan over medium-high heat.
- While the pan heats, cut bacon into 1/2-inch pieces.
- When hot, add bacon to the dry pan. Cook, stirring occasionally, until crispy, 5-7 min.**
- Meanwhile, peel, then thinly slice shallot.
- Thinly slice chives.
- When bacon in done, remove the pan from heat. Using a slotted spoon, transfer bacon to a paper towel-lined plate.
- Carefully discard all but 1 tbsp bacon fat from the pan.
- Add peas to the boiling water. Cook for 3 minutes, then, add tortellini.
- Cook, stirring occasionally, until tortellini is tender, 2-3 min.
- Reserve 3/4 cup (1 1/2 cup) pasta water.
- Drain and return tortellini and peas to the same pot, off heat.
- Reheat the same pan from step 1 with reserved bacon fat over medium.
- When hot, add shallots. Cook, stirring occasionally, until softened, 2-3 min.
- Sprinkle Cream Sauce Spice Blend over veggies. Cook, stirring often, until veggies are coated, 1-2 min. Season with salt and pepper.
- Add cream, reserved pasta water and half the chives. Cook, stirring occasionally, until sauce comes to a simmer.
- Remove from heat.
- Add cream sauce, 2 tbsp (4 tbsp) butter and bacon to the pot with tortellini. Season with salt and pepper, then stir until combined.
- Divide tortellini between bowls.
- Sprinkle remaining chives over top.
