Prep

  • Before starting, preheat the broiler to high.
  • Wash and dry all produce.
  • Core, then cut pepper into 1/2-inch slices.
  • Cut tomato into 1/4-inch pieces.
  • Peel, then cut onion into 1/4-inch slices.
  • Halve rolls.
  • Pat steak dry with paper towels. Season with salt and pepper. 
Cook steak

  • Heat a large non-stick pan over medium-high.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then steak. Sear 1-2 min per side until golden.
  • Remove the pan from heat, then transfer steak to a foil-lined baking sheet.
  • Broil in the middle of the oven for 4-7 min, until cooked to desired doneness.**
  • Transfer steak to a plate. Allow steak to rest. uncovered, 2-3 min. 
Cook veggies

  • Meanwhile, add 1 tbsp (2 tbsp) oil to the same pan, then onions and peppers. Cook 3-4 min, stirring occasionally, until tender-crisp. Season with salt and pepper.
  • Transfer veggies to a plate.
Toast rolls

  • Remove foil from the baking sheet (from step 3), then arrange rolls on the unlined sheet, cut-sides up.
  • Spread garlic spread over rolls, then top with veggies and sprinkle cheese over veggies.
  • Broil in the middle of the oven for 2-3 min, until cheese melts (TIP:  Keep an eye on them so they don't burn.) 
Toss salad

  • Meanwhile, to a large bowl, add spinach, tomatoes and ranch. Season with salt and pepper, then toss to combine.  
Finish and serve

  • Thinly slice steak. 
  • Stack bottom buns with steak, then drizzle some BBQ sauce over top. Close with top buns. 
  • Divide salad and steak sandwiches between plates. 
  • Serve any remaining BBQ sauce on the side for dipping.
