Due to the different suppliers we purchase our products from, nutritional facts per meal can vary from the website to what is received in the delivered box, depending on your region.
- Before starting, wash and dry all produce.
- In a 1200 W microwave, cook potatoes directly in the bag for 5-6 min, until tender.
- Set aside for 2-3 min to cool slightly, before handling.
- Meanwhile, peel, halve, then cut onion into 1/4-inch slices.
- Thinly slice green onion.
- Peel, then mince or grate garlic.
- On a clean cutting board, pat chicken dry with paper towels. Cut into 2-inch pieces. Season with salt, pepper and Smoked Paprika-Garlic Blend.
- Heat a large pot over medium.
- When hot, add 1 tbsp (2 tbsp) oil, then chicken. Cook for 5-6 min, turning occasionally, until beginning to turn golden. (NOTE: Chicken will finish cooking in step 3.)
- Add corn, onions and garlic. Cook for 3-4 min, stirring occasionally, until veggies begin to soften and chicken is cooked through.** Season with salt and pepper.
- Sprinkle Cream Sauce Spice Blend over veggie and chicken mixture. Cook for 1 min, stirring often, until mixture is coated and fragrant.
- Add stock powder, cheddar, cream, 1/2 cup (1 cup) milk and 2 cups (4 cups) water. Bring up to a boil.
- Once boiling, cook for 2-3 min, stirring often, until cheddar has melted.
- Meanwhile, in a large bowl, using a potato masher, lightly smash potatoes. (NOTE: There should be many chunks!).
- To the same pot, add potatoes. Cook for 2-3 min, stirring often, until potatoes thicken the chowder. (NOTE: Scrape up any brown bits on the bottom of the pot.)
- Divide chowder between bowls.
- Sprinkle green onions over top.
